Mastering spices is a tough art, because adding one spice over the other can either make your dish, horrible or outstanding. To make it outstanding, it is important that one understands the flavors of each spices and use them in combinations, to complement the flavours of the other. And India being rich in its culinary skills has great cooks in almost every household with sharp nasal and taste senses to understand spices and talent of using them the right way.

If you come across any Indian then ask them what they miss the most, when away from their homeland, and the answer would be – Home made food, it is probably the one and only thing they miss.

India being a country known for its rich spices and its wide varieties, each home spreads out a mesmerizing aroma of their hand made food. And each household nurtures grandma given recipes which is not only mouth watering but also finger licking. For a fact, there are few bases which constitute the traditional Indian cooking and those are nothing but the spices and its combinational mixes.

And the process, which includes tossing of raw spices which may or may not include some fat (oil or ghee) is called Blooming the spices. Also, when these raw tossed spices are freshly grinded and blended together in appropriate quantities, they form the most aromatic spice mixes. These spice mix are most commonly used in everyday cooking. Here is the exact method used to make, Garam masala, Jeera-dhania masala and all others.

Garam Masala Recipe

Kinnari
Garam Masala is a rich Indian spice mix, where raw spices are well-bloomed and tossed till aromatic. These spices are then grinded by traditional pestle and mortar to make a fine powder.

Equipment

  • Skillet
  • Spatula
  • Grinder
  • Air tight container

Ingredients
  

  • 3 tbs Coriander seeds
  • 3 tbs Cumin seeds
  • ½ tbs Fenugreek seeds
  • 1 tbs Ajowain caraway
  • 1 tbs Black Pepper
  • 6-7 pieces Black Cardamom
  • 5-6 pieces Anis Star
  • 1 tbs Cloves
  • 8-9 sticks Cinnamom
  • 2 balls Nutmeg
  • 7-8 leaves Bay Leaf
  • 10 pieces Green Cardamom
  • 2 tbs Fenugreek leaves (dried)
  • 1 tbs Ginger powder (dried)

Instructions
 

  • Collect all the spices and start dry roasting them. Be very cautious while roasting the spices, keep tossing them to avoid burning.
    Dry roast the spices just for 1-2 mins
  • Once all the spices are roasted, add them to a grinding pot and grind them well until its a fine powder.
    Voila!!! your spicy mix- Garam Masala is ready.

Notes

You can consider using traditional method to grind the spices for a more flavorful garam masala, i.e, by using pestle and mortar.
Store the garam masala in an air-tight container and it will last long.
Mind your hands while handling the garam masala, it may cause burning on skin or eyes.
