Kutchi Dabeli or Stuffed Double Roti

Kutchi Dabeli is a spicy, tangy, filling tea time snack found in all streets of India. A bite into this juicy stuffed double roti is a complete package with all possible flavors to offer, just in one dish. This recipe can be smartly modified for children by adding next to no chillies and minimising on other spices.

Ingredients
  

  • 7-8 pieces Boiled Potatoes (medium size)
  • 2 inch Ginger Grated or finely chopped
  • 6-7 cloves Garlic
  • 2-3 pieces Cinnamon sticks
  • 2 pieces Red Dried Chilli (Dip it in some lukewarm water, for 5-7mins)
  • 2 pieces Clove
  • 4 tbsp Oil

Spices

  • a pinch Hing/Asafoetida
  • 2 tsp Turmeric Powder
  • 3 tsp Garam Masala Easily available in any Indian grocery stores
  • 1 tsp Ajwain/Ajowan caraway
  • 2 tsp Red Chilli Powder
  • 1 tsp Cumin Seeds
  • 5 tsp Dabeli Masala Easily available in any Indian grocery stores
  • 2 tsp Chat Masala Easily available in any Indian grocery stores
  • 3 tsp Sugar
  • Salt to taste

Garnishments

  • 25 gm Tutti-Frutti (Fruit Flavored Hardened Sugar) Mostly found in baking section.
  • 100 gm Roasted Peanuts
  • 2 pieces Onion Fine Chopped
  • 5 gm Cilantro / Coriander Fine Chopped
  • ½ shell Pomegranate
  • 50 ml tamarind chutney Easily available in any Indian grocery stores

Instructions
 

  • Start with boiling potatoes on a medium flame, let it cook for 3-4 whistles or until they are perfectly cooked. We need to mash the potatoes--so, its quite ok, if the Potatoes overcook by a whistle.
  • While Potatoes cook, collect all the spices and ingredients together. Chop the necessary veggies (Onion, Pomegranate, Coriander, etc.) Now add the raw ingredients-- garlic, ginger, cloves, cinnamon sticks, red chillies to the grinding pot and make a smooth paste of it.
    Peel out the skin, mash the potatoes until a coarse paste.
  • On a medium flame, use a wide bottom skillet and heat the oil. Add the spices- cumin seeds, asafoetida, ajowan caraway. Add the spice paste prepared in the earlier step. Mix it up and let it cook until its brownish and aromatic. Add mashed potatoes and start mixing it up. Let the spices blend well with the potatoes by letting it cook for a while. Add salt and mix it. Add all the powdered spices -turmeric, chilli powder, garam masala, dabeli masala and mix it up. Add some water to make mixing easier and to make the filling more miry. Keep mixing it--use a spatula or masher to do so.
  • More water can be added if the filling turns dry while cooking. Let it cook for next 5-7mins so that the flavors sink in. Add chaat masala and sugar. Turn off the heat. Mix the filling well and spread out over the wide bottom of the skillet/pan.
    Add garnishments- onion, peanuts, pomegranate, coriander, tutti-frutti.
    The filling is ready, lets stuff the buns now.
  • Use a flat pan to roast our Dabelis´. On medium flame, heat up the pan and cover the surface of the pan with butter.
    Take Dabeli bread/ Double Roti or any sort of soft bread bun like burger bread will also do. Cut the bun half from the center horizontally and start stuffing it with a thin layer of butter, then add the potato filling, next add the chutney to give a tangy flavor- tamarind, add onion, peanuts, pomegranate, tutti frutti to the bun and pack it well.
    Roast the bread bun from all sides and its ready to serve. Continue stuffing and roasting similarly as described. Serve them hot and crispy with a handful of peanuts and onions on its side.

Notes

Child-Friendly: Worried that your children don´t eat enough, then you can improvise this recipe and attract them to food with this recipe. And to your surprise, they will love it.
  1. Add Cheese: Children love cheese and that´s exactly how you can add some proteins to this dish. Adding cheese to this recipe, makes it taste out of the world. 
  2. Add Ketchup: Adding ketchup will also enhance the flavors of this recipe. If you tend to add ketchup then skip adding tamarind chutney. 
Don´t have tamarind chutney? or don´t wish to make it or don´t know where to find it?
Excuse can be any, but again there is a solution to this one. Replace the tamarind chutney with barbeque sauce and I promise you will replace your Burgers with Dabelis.
It is a perfect pick for any vegetarian meals. 
Can easily be improvised to Vegan, by replacing butter with oil. Skip on using cheese. And your are good to go!
