Cabbage Flatbread - Healthy Indian Flatbread Recipe

Cabbage Flatbread is a rich & healthy blend to the classic combination of bread and vegetables (Roti and Sabzi ) in the typical Indian meals. Easy to make and requires very less time, yet the outcome is utterly delicious and tempting. Can be part of any meals and you will thoroughly love it. Serve them will a bowl of yoghurt or some pickle and you are set for a yummy meal!

Ingredients
  

  • 300 gm Cabbage
  • 1 medium sized Onion
  • 6-7 pcs Garlic
  • 1 tsp Turmeric Powder
  • 3 tsp Chilli Powder
  • 2 tsp Coriander Powder
  • 2 tsp Garam Masala
  • 4 tsp Sesame Seeds
  • 2 tsp Ajwain/Ajowan caraway
  • a pinch Hing/Asafoetida
  • 3 cups Wheat Flour
  • 1 cup Water
  • to taste Salt
  • 5-6 tbsp Sunflower Oil

Instructions
 

  • The recipe is pretty simple, so let´s start with gathering all the ingredients.
  • Once that´s done. Start cutting the vegetables -- Cabbage, Onion and Garlic into small cubes. We don´t need to invest a lot of time to fine chop the vegetables, as we are using a chopper for the same.
  • Mind your hand while cutting Cabbage, make sure you don´t hurt yourself.
  • Add the veggie cubes to the chopping pot, if the pot is small in size then divide the veggies and chop them in lots. The veggies need not be separately done, they can be mixed together in one.
  • Chop the cabbage, onion and garlic to fine pieces.
  • Take a bowl in which you will knead the dough. Make sure it is sufficiently big. Add the chopped vegetables to the bowl.
  • After adding the veggies, add the spices -- turmeric, coriander powder, garam masala, chilli powder, ajowan caraway, sesame seeds, asafoetida apart from salt to the bowl one by one.
  • Now add the salt to the bowl. Adding salt will make cabbage release moisture content. We use this moisture to knead the dough.
  • Start adding the wheat flour little by little to the bowl and knead the dough simultaneously.
  • Kneading is very simple and convenient with all the ingredients mixed well.
  • If the cabbage releases a lot of moisture, then there is no need to add water to make the dough to an appropriate tenderness.
  • And if you feel kneading is difficult and it is too doughy -- there isn´t sufficient water, then only add water. The softness of the dough matters, we do not want to make it too soft and sticky.
  • While adding water, try to add very little and knead the dough. Repeat if your haven´t reached to the right consistency like in the video.
  • Once the dough is done, add 1 tbsp oil to the dough and lightly knead the dough, so that the oil is well absorbed and penetrates.
  • Cover the bowl with a lid and let it rest for 5 mins. Do not over keep the dough, as cabbage may still release moisture, making the dough too soft and sticky to roll.
  • Cover the flatbread rolling board with a thin plastic film to avoid stickiness.
  • Form small circular balls of dough, pat it with wheat flour on all sides, and get them ready to roll.
  • Start rolling the ball to draw a nice circular flatbread with the help of a rolling pin. Dust the flatbread (whenever necessary) into the pit of wheat flour to easily roll out.
  • Keep rolling till the flatbread is about 3mm to 5mm thick.
  • Place the flatbread on a flat pan at a medium flame, once the pan is heated.
  • After you see some bubble rising up on the bread, flip the bread and let it cook on the other side. Repeat it one more time.
  • Apply oil to the top of the flatbread and flip the flatbread. With the help of a spatula move the bread swiftly to let it cook from all edges.
  • Now apply oil to the other side, flip it and with a spatula move it swiftly, so that all edges are well-cooked.
  • Black spots will start to appear on each sides of the bread. Once all the edges are spotted, it is ready to be served.
  • While you are tossing the sides, roll out more flatbread alongside. This will help you to optimise your work.
  • Repeat the same procedure for the rest of the dough balls. And soon all your cabbage flatbread would be ready.
  • Serve the hot, crispy, spicy cabbage flatbread with chutney, ketchup, pickle, cup of Chai or just plain, possibilities are endless.
