CHILLIES and Spicy food are my lifeline and that´s what makes me even more excited getting this recipe to you.

Now, everyone has those days where you take efforts and yet your cooking turns out to be taste-less or even those where you are bored to cook a whole meal and want a shortcut. Combination of all such days in my life, got me to this recipe.

This fresh chilli pickle recipe is an instant solution to spice up all those taste-less and boring food. It is also an easy go along side-y for any meal.

Pickles remind me of days back in India, where they are made in bulks and consumed round the year. This pickle making process involved most of the family members helping out and having fun conversations. The most candid moments were the ones, while making the raw mango pickle, where we, children use to end up eating most of the raw mango slices.  

This mildly spicy, tangy pickle recipe requires very few ingredients which are mostly available in our kitchen and the recipe takes very less time to come together.

Homemade Chilli Pickle | Instant Fresh Chilli Pickle Recipe

Instant Fresh Chilli Pickle is a hot, tangy accompaniment for all your meals. This pickle recipe is simple composition of fresh tender chillies seasoned with split mustard seeds and flavored with Indian spices.

Ingredients
  

  • 3-4 pieces Jalapeneo Cut in thin circular slices
  • 2-3 pieces Pepperoni Cut in thin vertical slices
  • ½ slice Lemon
  • 3 tbsp Split Mustard seeds
  • 1 tbs Turmeric Powder
  • 2 tsp Coriander Cumin Powder
  • 2 tsp Garam Masala
  • 4 tbsp Oil
  • Salt to taste

Instructions
 

  • Clean wash the fresh chillies. Cut the chillies- Jalapenos´ and Pepperinos´ into circular and vertical thin slices respectively.
  • On a high flame, heat the oil. Once the oil is heated, add split mustard seeds to the hot oil. Mustard seeds will begin to crackle.
  • Add all the spices to the hot oil and stir it to mix it well. Turn off the heat.
  • Add the hot oil mix to the bowl full of chillies and start mixing up to well soak the chillies in the oil and spices.
  • Keep the pickle aside for 10-15 mins or till it cools down. Add lemon and salt to the pickle and blend it well.
  • And there you go, the pickle is ready!

Notes

Fresh Chilli Pickle recipe can be easily modified with any kind of chillies. 
Basically, this recipe works for all kinds of chillies. So, you can use the kind you admire. Just bear in mind, the spiciness will differ accordingly.
To reduce the SPICY quotient of the pickle-- add more salt and lemon ( you could double the quantity of lemon and salt). 
Or you can remove the seeds of chilli which will effectively reduce the spiciness. 
This pickle will last 5-7 days when stored in refrigerator. 
For storing it even longer-- Use vinegar (add few drops while adding lemon and salt)

You can even add Ginger or fresh Turmeric to this recipe and have a rich gingery chilli pickle. Alternatively, you can add carrot, raw mango to this recipe and have a mix pickle. Variations and possibilities are infinite. But my favourite is the one I shared here.
