What better than chilli garlic pan mushroom!

Chilli Garlic Pan Mushroom is a piquant and peppery appetizer which adds rich and deep flavor to delicious alongside sides like – Vegetable Sichuan Fried Rice. Mushroom seasoned with chilli and garlic perfectly complements the flat flavor of mushroom and makes it more appetising.

An appetizer is served before the main course which comes in small portions, helps you increase your hunger and prepare you for the main course. But a recipe like this one, is difficult to limit as an appetizer as its so tempting and mouth watering that you will be stuck to it and skip off the main course. Well of course, we don´t want that so why not serve it along our main dish as a side dish.  

In this recipe, mushrooms are sautéed with spicy chilli and aromatic garlic with a dash of soya sauce. Soya sauce helps caramelising this spicy peppery mushroom to deep golden brown and adds an intense flavour to the dish.

The key ingredients here are – garlic and chilli so, use lots of it. I have used dried red chillies which were extremely hot, as I am a big fan of spicy food. But if you are not, then you can opt for mild chillies like Paprika/Bell Pepper, Jalapeno or Serrano which will help you moderate the spiciness yet add intense flavor to the dish.

Feel free to use any type of mushrooms for this recipe, as all types of mushroom tend to complement the flavors of chilli and garlic well.

Cut them thin – Cutting them thin will help them caramelize well and cook faster. It will also absorb the flavors well.

Do not Stir a lot – Stirring a lot will make the thin slices of mushroom break apart quickly and easily.

Making this recipe is pretty simple as also a time saver! Have all your ingredients ready and your sorted.

My chilli garlic pan mushroom recipe is created for small hunger and is a perfect side dish for most Asian main dishes. This can be made as an appetizer for any cuisine main course.

  • Pan/ shallow skillet

Ingredients
  

  • 400 gm Mushrooms Cut in thin slices
  • ½ bowl French beans Finely chopped
  • ½ bowl Spring Onion (white part) Finely chopped
  • ½ bowl Spring Onion (green part) Finely chopped
  • ½ bowl Cabbage Finely chopped
  • 2 tsp Garlic Finely chopped
  • 2 tsp Ginger Finely chopped
  • 1 tsp Red Chilli paste
  • 2 tsp Rosemary preferably dried
  • 2 tsp Soya sauce
  • 2 tsp Tomato Ketchup
  • 1 tsp Black pepper can be reduced as per taste
  • 2 tbsp Oil Can be replaced with butter or olive oil
  • Salt to taste

Instructions
 

  • Clean wash all the veggies specially the mushrooms, use a mushroom brush if necessary. Finely chop the vegetable and the mushrooms to thin slices.
  • On a medium flame heat the pan. Add oil and let it heat. Add red chilli paste, ginger, garlic and saute them till garlic turn aromatic.
  • Add all the veggies to the pan - onion, cabbage, french beans. Mix them well and let it cook till the onions turn translucent.
    Add little salt and then add thin sliced mushrooms. Add some more salt to help mushrooms cook faster and evenly by releasing moisture. Blend it well for the mushrooms to soak into the spicy and garlic-y flavors
  • Let the mushrooms cook and once they are done, let the moisture evaporate.
    (to cook the faster, use a lid)
    Toss the mushrooms to make sure they have blended well with the flavors and veggies.
  • Add rosemary seasonings and caramelise it with soya sauce and tomato ketchup. Mix it well or toss them to avoid delicate mushrooms to break.
  • Season it with salt (if required) and freshly grind black pepper.
    Garnish it will spring onions (green part) and serve them hot.

Notes

My recipe, Chilli Garlic Pan Mushroom is an easy appetizer/ side dish that anyone can make. It is highly nutritious and can be made Gluten Free with a slight change.
Gluten Free: Use Gluten Free Soya sauce in this recipe. 
Suitable for Vegan & Vegetarian believers.
Avoid adding too much salt initially, as we are using soya sauce in the recipe.
